This rolled cookies called barquillos is one of the many Spanish influences that we adapted as our own. Obviously the world barquillos is Spanish, not Filipino. Also called biscuit roll, this delicacy is made by pouring a liquid batter in hot iron plates similar to cooking pancakes or lumpia wrapper. But a skillful hand is required in rolling it in wooden pin before it hardens into hollow biscuit tubes.
How to Make Barquillos
Ingredients
- 5 egg yolks
- sugar to taste
- 3/4 cup milk
- rind of 1 lemon
- 1/4 cup sifted all-purpose flour
Instructions
How to make Barquillos
- Stir lightly beaten egg yolks into milk.
- Add flour and mix until smooth. Add sugar and powdered rind.
- Grease wafer iron (barquillera) on both sides and heat over moderate fire.
- Drop tablespoon of batter in the center of hot iron, press iron plates together.
- Heat iron on both sides to brown wafer.
- Shape barquillos while still warm and soft using a greased wooden cone or pin.
