If you are in search of a unique kind of pastillas, or a vegetarian pastillas, then I think this potato pastillas is a good try. This is similar to the ordinary pastillas de leche but it was added with mashed potatoes and shredded carrots.
To make potato pastillas; Melt butter over low heat. Add condensed milk and stir well. Slowly add the mashed potato and shredded carrot while stirring continuously. Cook until mixture thickens. Spread evenly on a greased baking tray and allow to cool. Cut into 1/2 inch slices and 2 inch long strips. Roll each in sugar before wrapping in a cellophane.

- 2 pcs potatoes boiled and mashed
- 1 pc carrot shredded
- 1/2 cup white sugar
