Ingredients:
Watermelon peels
1 tablespoonful of lime to a liter of water
How to make Watermelon Peels Preserve
- Pare the watermelon and slice crosswise to about 1/3 inch thick.
- Remove the central part but leave some red portions.
- Soak in lime water (one tablespoonful of lime to a liter of water) overnight. Wash and blanch for 10 minutes.
- Cook in syrup made up of two parts sugar to one part water for 30 minutes. Soak overnight.
- Boil the syrup without the watermelon slices until thick enough.
- Pack watermelon slices into 12-ounces preserving jars.
- Pour syrup and remove air bubbles.
- Half-seal and sterilize jars for 25 minutes in boiling water.
- Seal completely.
