This healthy medley salad recipe consist only 3 kinds of veggies, greens beans, lettuce and carrots. But this salad contains cheese and eggs that may not be acceptable to vegans. Only ovo-lacto vegetarian can appreciate this salad and even non-vegetarians will love this. Try it!
Ingredients:
2 cups green beans (habichuelas), cooked
1 cup cheese, cut into strips
3 hard-cooked eggs, quartered
1 head lettuce, washed and chilled
2 cups sliced carrots, cooked
1/2 cup mayonnaise
How to make medley salad
- Arrange beans, carrots, cheese and eggs on a bed of lettuce.
- Garnish with the radish roses. Chill.
- Serve with mayonnaise.
- Yield: 6 servings.
