This is a kind of mock chicken drumstick made from cooked mashed carrots, bread crumbs, pimiento and egg. This dish is suited to vegetarians and not for vegans because it contains egg which is used as a binder for the ingredients to create the shape of drumsticks.
To make carrot drumsticks; Mix margarine, carrots, soft crumbs, egg, onion, pimiento and seasonings. Form in shape of drumsticks. Insert a wooden skewer or a short piece of macaroni in end of each. Cover with crumbs and bake at 350 °F for 25 minutes. Place a paper frill on each skewer. Serve with white sauce if desired. - 1 egg well-beaten
