A pinoy way of making apple cake. You can’t miss those apples in supermarkets so there is no excuse on making this apple pie. But the nuts used in the recipe are hard to find and expensive if you ever find them in some big supermarkets. But it can be substituted with local nuts like cashew, pili nuts or peanuts. The recipe is simple and it can be made with a basic baking skill.
Ingredients:
2 cups finely diced apples
1 cup (200 grams) sugar
1 cup (140 grams) all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
3/4 cup coarsely chopped nuts (cashew, walnuts, pecans or hazelnuts, or combination)
1 teaspoon vanilla extract
1 egg
Topping
1/2 cup (100 grams) brown sugar
1/2 cup (100 grams) granulated sugar
2 tablespoons all purpose flour
1/4 cup rum
1/2 cup water
1/2 cup (112 grams) butter
1 teaspoon vanilla extract
How to make Apple Cake:
- In medium bowl, mix apples and sugar. Let stand until sugar is thoroughly dissolved.
- In another medium bowl, beat egg at medium speed, about 1 minute.
- Sift dry ingredients together. Stir into apple mixture. Add beaten eggs, nuts and vanilla.
- Pour into an 8″ x 8″ inch pan. Bake at 375 °F for 40 minutes or until cake tester or toothpick inserted in center comes out clean.
How to make the topping:
- Combine sugar, flour, rum and water and cook until clear. Add butter and vanilla.
- Stir until butter is thoroughly melted. Pour over cake while both are hot. Serves 6.
