This is a simple cassava cake with just one variation. It contains pili pulp and pili nuts. If you are not familiar with pili pulp, it is the fruit incasing the pili nut with its hard shell. Usually the pili pulp is discarded by farmers who harvest the pili fruit and take out the pili shells with the nuts. Then they crack the shells open in order to get the pili nuts. Pili nuts are easier to purchase since it is available in supermarkets or even on online stores. But you can buy the pili pulp online just search the internet.
How to make Pili Pulp Cassava Cake
Ingredients
- 1 kilo cassava grated, juice extracted
- 6 pcs eggs
- 3 cups pili pulp
- 3 tbsp vanilla
- 1 bar grated cheese 1/3 grated as topping
- 1 kilo sugar
- 6 cups milk evaporated or fresh milk
- 2 cups pili nuts 1/2 cup toasted and chopped add to mixture and 1/2 cup whole pili as topping

How to make Pili Pulp Cassava Cake
- Add together cassava, pili pulp, grated cheese, milk, sugar, chopped toasted nuts, vanilla and eggs.
- Stir to mix evenly. Pour to mold, Bake in 350 °F oven for 15minutes (bake halfway.) Remove from oven and arrange whole pili into flower.
- Add grated cheese and return to bake in 350 °F oven for another 15minutes until golden brown.
