Ingredients:
1 & 1/4 cups fresh coconut milk
1/4 cup kalamansi juice
1/4 teaspoon turmeric
1 teaspoon curry powder
1 cup water
1 cup peas
2 teaspoons salt
1/4 cup oil
1 cup chopped onions
1 & 1/2 cups cauliflower
3 cups cubed potato
1/2 cup chopped green pepper
How to cook Indian Curry:
- Sauté onion and green pepper in oil.
- Add curry, turmeric, salt, potato, cauliflower, peas and water.
- Simmer until tender.
- Add coconut milk and kalamansi juice when vegetables are tender.
- Cover and let stand for 5 minutes. Yield: 6 servings.
