Ingredients:
1 block tofu, sliced
1-1/2 cups water
2 clover garlic. crushed
1-1/2 tablespoons flour
1 medium onion, sliced
1/4 cup kalamansi juice
1/2 tablespoon brown sugar
Strips of ginger
Strips of red and green pepper
Salt to taste
How to cook Tofu Escabeche:
- Fry tofu. Set aside. Sauté garlic, onion and ginger. Add the liquid ingredients.
- Bring to boil, stirring constantly.
- Drop in strips of pepper and sliced garlic.
- Add the fried tofu to the mixture and let simmer for 2 minutes.
- Remove from fire and arrange nicely on a platter. Yield: 4 servings.
